Equipment
- Mixing bowls
- Electric mixer or whisk
- Spatula
- 8x8-inch baking dish or similar
- Fine sieve (optional, for straining raspberry puree)
- Plastic wrap or lid
Ingredients
- 2 cups fresh raspberries (plus extra for garnish)
- 24–30 ladyfingers (savoiardi)
- 1 ½ cups mascarpone cheese
- 1 cup heavy cream
- ½ cup sugar (powdered or granulated)
- 1 tsp vanilla extract
- Optional: 2–3 tbsp raspberry liqueur or juice
- Optional: 1 tsp lemon zest for garnish
For Raspberry Syrup (optional homemade):
- 1 cup fresh raspberries
- ½ cup sugar
- ¼ cup water
Instructions
- Prepare Raspberry Syrup (Optional):Combine raspberries, sugar, and water in a small saucepan. Simmer gently for 5–10 minutes until raspberries break down. Strain to remove seeds and cool.
- Make Mascarpone Cream:Beat mascarpone with sugar and vanilla until smooth. Fold in whipped heavy cream gently to maintain airy texture.
- Layer the Ladyfingers:Briefly dip ladyfingers in raspberry syrup or puree. Avoid over-soaking. Arrange a single layer at the bottom of your dish.
- First Layer of Cream:Spread half the mascarpone cream over ladyfingers. Add a layer of fresh raspberries on top.
- Second Layer:Repeat with remaining ladyfingers and mascarpone cream. Finish with a layer of fresh raspberries. Optionally sprinkle lemon zest.
- Chill:Cover and refrigerate for at least 4 hours or overnight to set layers and enhance flavors.
- Serve:Slice or scoop into individual portions. Garnish with extra raspberries or powdered sugar, and drizzle with raspberry coulis if desired.
Notes
- Use fresh raspberries: Ensure natural sweetness and color; adjust sugar if using tart berries.
- Avoid over-soaking ladyfingers: Keeps layers firm and prevents mushiness.
- Fold whipped cream gently: Maintains light and airy mascarpone texture.
- Chill overnight: Enhances flavor and sets layers perfectly.
- Make-ahead friendly: Assemble a day in advance for stress-free serving.
- Variations: Individual servings in jars, chocolate raspberry layers, lemon raspberry twist, mixed berries, or alcohol-free version using juice instead of liqueur.
