Creamy Lemon Squares

ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, chilled and cut into small pieces
  • 4 large eggs
  • 1 cup granulated sugar
  • 2 tablespoons of all-purpose flour
  • 1/2 cup of lemon juice
  • 1 tablespoon grated lemon peel
  • 1/2 cup heavy cream
  •  powdered sugar

Instruction

  1. Preheat the oven to 350°F (175°C) and grease an 8″ x 8″ square baking pan.
  2. In a medium bowl, mix 1 1/2 cups flour and 1/2 cup powdered sugar. Cut in the cooled butter until the mixture resembles coarse crumbs. Press the mixture into the prepared baking tray.
  3. Bake for 18-20 minutes, or until light golden brown.
  4. In a separate mixing bowl, whisk together the eggs, granulated sugar, 2 tablespoons of the flour, lemon juice, lemon zest, and heavy cream. Pour mix over the baked crust.
  5. Return to oven and bake for an additional 20-25 minutes, or until filling is cooked through and golden brown.
  6. We take it out of the oven and let it cool to room temperature.
  7. Sprinkle with powdered sugar before slicing and serving.
