  • 1 cup fresh raspberries
  • ½ cup sugar
  • ¼ cup water

Instructions
 

  • Prepare Raspberry Syrup (Optional):Combine raspberries, sugar, and water in a small saucepan. Simmer gently for 5–10 minutes until raspberries break down. Strain to remove seeds and cool.
  • Make Mascarpone Cream:Beat mascarpone with sugar and vanilla until smooth. Fold in whipped heavy cream gently to maintain airy texture.
  • Layer the Ladyfingers:Briefly dip ladyfingers in raspberry syrup or puree. Avoid over-soaking. Arrange a single layer at the bottom of your dish.
  • First Layer of Cream:Spread half the mascarpone cream over ladyfingers. Add a layer of fresh raspberries on top.
  • Second Layer:Repeat with remaining ladyfingers and mascarpone cream. Finish with a layer of fresh raspberries. Optionally sprinkle lemon zest.
  • Chill:Cover and refrigerate for at least 4 hours or overnight to set layers and enhance flavors.
  • Serve:Slice or scoop into individual portions. Garnish with extra raspberries or powdered sugar, and drizzle with raspberry coulis if desired.
