The easiest homemade taco soup recipe loaded with beef, beans, corn, peppers, and tomatoes with homemade taco seasoning. Top soup with avocado, cheese, sour cream, and tortilla chips.

Ingredients
  

Taco soup:

  • 2 cups beef broth
  • 3 garlic cloves, minced
  • 1 cup corn
  • ½ green pepper cut into cubes
  • ½ red pepper cut into cubes
  • 1 1/2 cups diced tomatoes
  • 16 ounce can beans, drained, (kidney or pinto)
  • 1 small onion finely chopped
  • 1 tablespoon fried oil
  • 1 pound lean ground beef

Taco seasoning:

  • ½ teaspoon thyme
  • ¼ teaspoon red pepper flakes
  • Half a teaspoon of ground pepper
  • 1 teaspoon salt
  • 1 tablespoon hot pepper powder
  • 1 teaspoon ground paprika
  • 1 teaspoon ground cumin

Instructions
 

  • Combine taco seasoning ingredients.
  • In a Dutch oven, heat the oil. Once heated through, saute ground beef with it broken down as it cooks, lightly seasoning with the taco seasoning.
  • Meanwhile, finely chop the onion. Cubes of red pepper, green pepper and tomato.
  • Once the meat is brown, add the rest of the ingredients and seasonings. Set the heat to low and cook for 12-15 minutes. Serve the soup hot with desired toppings.
