Roasted garlic mushrooms

Ingredients:

  • 1 pound (450g) mushrooms (such as button or cremini), cleaned and trimmed
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  2. In a large bowl, combine the cleaned and trimmed mushrooms with the minced garlic.
  3. Drizzle the olive oil over the mushrooms and garlic. Season with salt and pepper to taste. Toss until the mushrooms are evenly coated with the oil, garlic, and seasoning.
  4. Spread the seasoned mushrooms in a single layer on the prepared baking sheet.
  5. Roast the mushrooms in the preheated oven for 15-20 minutes, or until they are tender and golden brown, stirring halfway through to ensure even cooking.
  6. Once roasted, remove the mushrooms from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley if desired for added flavor and garnish.
