Homemade pancakes are very easy. These are crunchy on the outside with a light and fluffy center. You can add any combination of chocolate chips to blueberries and even use the base for delicious waffles.

Ingredients
  

  • 1/4 teaspoon salt
  • 4 teaspoons baking powder
  • 2 cups all-purpose flour, 250 g
  • 2 teaspoons vanilla
  • 1 3/4 cups milk of any kind
  • 1/2 cup light olive oil, canola oil or vegetable oil
  • 2 tablespoons granulated sugar
  • 2 large eggs

Instructions
 

  • In a large bowl, beat 2 eggs and 2 tablespoons sugar on high speed for 3 minutes until mixture is fluffy.
  • Add the rest of the wet ingredients in the following order: oil, milk, and vanilla.
  • Stir 4 teaspoons baking powder and 1/4 teaspoon salt into 2 cups of flour, then add the dry ingredients to the bowl.
  • Beat on low speed just until blended. Do not over mix - the mixture should contain small lumps.
  • Preheat the waffle iron (we set it to 3). Grease a waffle iron if necessary (some non-stick waffle makers do not need to be sprayed or oiled).
  • Once the waffle iron is hot, spray with cooking oil or grease the grates (if necessary), then add enough batter to just barely fill the grooves. Leave some room for expansion. Cover and cook until time runs out or until golden crisp. Use plastic or silicone tongs to remove the waffle and serve it warm.
