Ingredients
  

  • ¼ cup chives, finely chopped, for garnish
  • 3 pounds wine potatoes, (5 large potatoes), peeled and thinly sliced less than 1/8 inch thick
  • 2 cups (8 ounces) shredded medium cheddar cheese, divided
  • 3 garlic cloves, minced
  • 1/2 cup full fat milk
  • 1/2 cup mayonnaise
  • 1/2 cup ranch dressing (we used chilled yogurt ranch)

Instructions
 

  • Preheat oven to 375 degrees Fahrenheit with rack positioned in the middle of the oven. You will need a greased 9 x 13 casserole dish.
  • In a large bowl, mix ranch, mayonnaise, milk, minced garlic, and 1 cup cheddar cheese together. Add the thinly sliced ​​potatoes and stir until each slice is coated with the creamy sauce.
  • Spread the potatoes evenly in the casserole, patting them evenly in the dish, then sprinkle with the remaining cup of cheddar cheese.
  • Cover well with aluminum foil and bake at 375°F for 65-75 minutes or until set when pierced with a knife. Then remove the tin foil and bake for an additional 5 minutes. Roast over high heat for 2-3 minutes at the end to brown the cheese crust slightly. Rest for 10-15 minutes, then garnish with chives to serve.
