Easy Scalloped Potatoes Recipe

The easiest scallop potato recipe! This potato side dish contains just a few ingredients and comes together quickly. It's perfect for a busy weekend but also great for special occasions.

- ¼ cup chives, finely chopped, for garnish
- 3 pounds wine potatoes, (5 large potatoes), peeled and thinly sliced less than 1/8 inch thick
- 2 cups (8 ounces) shredded medium cheddar cheese, divided
- 3 garlic cloves, minced
- 1/2 cup full fat milk
- 1/2 cup mayonnaise
- 1/2 cup ranch dressing (we used chilled yogurt ranch)
Preheat oven to 375 degrees Fahrenheit with rack positioned in the middle of the oven. You will need a greased 9 x 13 casserole dish.
In a large bowl, mix ranch, mayonnaise, milk, minced garlic, and 1 cup cheddar cheese together. Add the thinly sliced potatoes and stir until each slice is coated with the creamy sauce.
Spread the potatoes evenly in the casserole, patting them evenly in the dish, then sprinkle with the remaining cup of cheddar cheese.
Cover well with aluminum foil and bake at 375°F for 65-75 minutes or until set when pierced with a knife. Then remove the tin foil and bake for an additional 5 minutes. Roast over high heat for 2-3 minutes at the end to brown the cheese crust slightly. Rest for 10-15 minutes, then garnish with chives to serve.
