Lasagna cups are a delightful twist on traditional lasagna, made by layering lasagna noodles, ricotta cheese, marinara sauce, and mozzarella in a muffin tin. Here’s a basic recipe to get you started:
Ingredients:
Lasagna noodles (around 12 noodles)
1 cup ricotta cheese
1 cup marinara sauce
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
Salt and pepper to taste
Cooking spray or olive oil for greasing
Instructions:
Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin with cooking spray or olive oil.
Prepare the Noodles: Cook the lasagna noodles according to the package instructions until al dente. Drain and lay them out on a clean surface.
Assemble the Cups:
Cut each lasagna noodle in half crosswise.
Place one half into each muffin cup, overlapping the edges to fit and creating a cup shape.
Layer the Fillings:
Spoon a small amount of marinara sauce into the bottom of each noodle cup.
Add a spoonful of ricotta cheese on top of the sauce in each cup.
Sprinkle a little mozzarella cheese over the ricotta.
Repeat the layers: sauce, ricotta, and mozzarella until each cup is filled. Finish with a sprinkle of Parmesan cheese on top.
