Equipment

  • Dutch oven or large soup pot
  • Skillet (optional for bacon)
  • Cutting board & knife
  • Wooden spoon
  • Measuring cups & spoons

Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 4 garlic cloves, minced
  • 6 cups chicken broth
  • 4 medium potatoes, thinly sliced
  • 1 bunch kale, chopped
  • 1 cup heavy cream (or half-and-half)
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper to taste
  • Freshly grated Parmesan (for garnish)

Instructions

  • Brown Sausage & Bacon: In a Dutch oven, cook sausage until browned. Remove and set aside. Cook bacon until crisp, then remove, leaving a bit of fat in the pot.
  • Sauté Aromatics: Add onion and garlic to the pot. Cook until softened and fragrant.
  • Add Broth & Potatoes: Pour in chicken broth. Add sliced potatoes and simmer for 15–20 minutes until tender.
  • Add Greens & Cream: Stir in chopped kale and cook until wilted. Reduce heat and add cream, stirring gently.
  • Finish & Serve: Return sausage and bacon to the pot. Adjust seasoning with salt, pepper, and red pepper flakes. Garnish with Parmesan. Serve hot with bread.

Notes

  • Add cream at the end to prevent curdling.
  •  Taste broth before adding cream—it should be balanced.
  •  Use fresh garlic for authentic flavor.
  •  Substitute turkey sausage or beans for lighter/vegetarian versions.
  •  Soup tastes even better the next day as flavors meld.
