Equipment

  • 9-inch springform pan
  • Mixing bowls
  • Electric mixer or whisk
  • Measuring Cups and Spoons
  • Spatula
  • Baking sheet (optional for marshmallow toasting)
  • Kitchen torch (optional)
  • Oven

Ingredients

Cookie Dough Base:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Chocolate Layer:

  • 1 ½ cups mini marshmallows or 8–10 large marshmallows, sliced

Graham Cracker Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • 6 tbsp melted butter

Optional Toppings:

  • Extra chocolate drizzle
  • Crushed graham crackers
  • Mini marshmallows

Instructions

  • Prepare Crust: Combine graham cracker crumbs, sugar, and melted butter. Press into a 9-inch springform pan evenly. Chill for 10 minutes.
  • Make Cookie Dough: Beat butter with sugars until creamy. Add eggs and vanilla. Mix in flour, baking soda, and salt until dough forms.
  • Assemble Pie: Spread half the cookie dough over the chilled crust. Layer chocolate chunks evenly. Top with remaining cookie dough, pressing lightly.
  • Bake: Preheat oven to 350°F (175°C). Bake for 25–30 minutes until edges are golden and center is set but slightly soft.

Toast Marshmallows:

  • Oven: Place under broiler 1–3 minutes, watching carefully.
Torch: Toast marshmallows until golden, keeping flame at a safe distance.
  • Cool & Slice: Allow pie to cool 10–15 minutes. Remove springform pan. Slice with a sharp knife, wiping clean between cuts for neat slices.
  • Serve: Enjoy warm or at room temperature. Optional: drizzle with chocolate or caramel sauce, and sprinkle extra marshmallows or graham cracker crumbs.

Notes

  • Chill Dough: Keeps edges from spreading too much.
  • Marshmallow Layer: Mini marshmallows distribute more evenly; large marshmallows give dramatic topping.
  • Substitutions: Use gluten-free flour or dairy-free butter/chocolate as needed.
  • Storage: Refrigerate leftovers up to 3 days; freeze slices individually for long-term storage.
  • Serving Tips: Serve with vanilla ice cream or a drizzle of caramel for extra indulgence.
