Ingredients
  

For the Pizza:

  • 1 pre-made pizza crust (or 1 naan/flatbread)
  • 1 cup cooked chicken breast, sliced or shredded (grilled or rotisserie)
  • ½ cup tzatziki sauce (homemade or store-bought)
  • ½ cup shredded mozzarella or crumbled feta
  • ½ small red onion, thinly sliced
  • ½ cup cherry tomatoes, halved
  • ¼ cup cucumber, thinly sliced
  • ¼ cup Kalamata olives, sliced (optional)
  • 1 tsp dried oregano or za'atar
  • Fresh dill or parsley, chopped (for garnish)

Optional:

  • Arugula (for topping after baking)
  • Olive oil (drizzle)
  • Garlic powder or roasted garlic (for extra punch)

Instructions
 

  • Preheat the oven to 220°C (425°F). If using a pizza stone, place it in the oven while it heats.
  • Prep the base: Place your pizza crust or flatbread on a baking sheet. Lightly brush with olive oil if desired.
  • Spread tzatziki sauce over the base, leaving a 1 cm (½ inch) edge.
  • Top with chicken, cheese, and red onions. Add a sprinkle of oregano or za’atar.
  • Bake for 12–15 minutes, or until the crust is crisp and golden, and cheese is melted.
  • Cool slightly, then top with fresh cucumber, tomatoes, olives, and arugula.
  • Finish with a drizzle of olive oil and a sprinkle of fresh herbs.
  • Slice and serve warm or at room temperature.

Notes

  • Make it vegetarian: Swap chicken for falafel, marinated chickpeas, or grilled halloumi.
  • Low-carb or gluten-free? Use a cauliflower or almond flour crust.
  • Want it extra creamy? Add a dollop of tzatziki on top after baking.
