Equipment

  • Mixing bowl
  • Measuring spoons
  • Meat thermometer
  • Skillet, oven, or air fryer
  • Parchment paper (for freezing or baking)
  • Spatula or tongs

Ingredients

Base Patties:

  • 1 lb ground turkey (preferably a mix of white and dark meat)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried sage
  • ½ tsp thyme
  • ½ tsp paprika
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp maple syrup or brown sugar (optional)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp fennel seed (optional)

Flavor Variations (Optional):

  • ¼ cup grated apple (for sweetness)
  • 1 tsp lemon zest + oregano (Mediterranean twist)
  • ½ tsp cayenne or diced jalapeño (spicy version)

Instructions

  • Mix Ingredients: In a large bowl, gently combine ground turkey with herbs, spices, and optional sweeteners or add-ins. Avoid overmixing to maintain tenderness.
  • Chill (Optional): For deeper flavor, cover and refrigerate for 1 hour or overnight.
  • Shape Patties: Wet hands and form mixture into 8–10 equal-sized patties, about ½ inch thick.
  • Cook:
Skillet: Heat a splash of oil over medium heat. Cook patties 3–4 minutes per side until golden and internal temp reaches 165°F.
Oven: Bake at 375°F for 20–25 minutes, flipping halfway.
Air Fryer: Cook at 375°F for 10–12 minutes, flipping once.
  • Serve or Freeze: Enjoy immediately or cool and freeze for future meals.

Notes

  • Use a meat thermometer to avoid overcooking—165°F is the magic number.
  • Freeze raw or cooked patties: Flash freeze on a tray, then store in bags.
  • Reheat from frozen: Lower heat and extend cook time slightly.
  • Customize seasoning to suit your taste—sweet, spicy, or herby.
  • Vegan swap: Use plant-based ground meat and adjust spices accordingly.
