  • 2 cups cooked rice, quinoa, or cauliflower rice
  • 1 cup cucumbers, diced
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives
  • ½ red onion, thinly sliced
  • ½ cup feta cheese, crumbled
  • 1 cup tzatziki sauce
  • Fresh parsley or dill (for garnish)

Instructions
 

  • Marinate Chicken: Mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and marinate for at least 30 minutes.
  • Cook Chicken: Grill or bake chicken until golden and cooked through (internal temp 165°F / 74°C). Slice into strips.
  • Prepare Base: Cook rice, quinoa, or cauliflower rice. Fluff and season lightly.
  • Assemble Bowls: Divide grains into bowls. Top with chicken, cucumbers, tomatoes, olives, and onion.
