  • 1 tbsp lemon juice + zest

Instructions
 

  • Prep garlic: Roast whole heads at 375°F until soft and caramelized, or sauté sliced cloves gently in olive oil until fragrant.
  • Sweat aromatics: In a heavy pot, soften onion/shallot with a pinch of salt. Avoid browning.
  • Simmer: Add potatoes, broth, bay leaf, and thyme. Cook until potatoes are fork-tender (20–25 minutes).
  • Blend: Remove bay leaf. Add garlic. Blend until silky smooth. Strain for extra refinement.
  • Finish: Stir in olive oil (or cream/yogurt), lemon juice, salt, and pepper. Adjust to taste.
  • Serve: Ladle into bowls. Garnish with chives, parsley, olive oil drizzle, and cracked pepper.
