Ingredients
  

  • 1 tbsp olive oil (optional, if pancetta is lean)
  • 4 oz pancetta, diced
  • 1 shallot, finely chopped
  • 2 ripe but firm pears (Bosc or Anjou), peeled and diced
  • 3 cups petite peas (fresh or frozen)
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh herbs (parsley or mint) for garnish

Instructions
 

  • Crisp pancetta: In a large skillet over medium heat, cook pancetta until golden and crispy. Remove with a slotted spoon and set aside. Leave rendered fat in the pan (add olive oil if needed).
  • Sauté aromatics and pears: Add shallots to the pan and cook until translucent. Add diced pears and sauté for 3–4 minutes until slightly softened.
  • Add peas: Stir in peas and cook until heated through and vibrant—about 3–5 minutes.
  • Season: Add lemon zest, lemon juice, and Dijon mustard. Stir to combine.
  • Finish: Return pancetta to the pan and toss everything together. Adjust seasoning with salt and pepper.
  • Serve: Transfer to a serving dish and garnish with fresh herbs. Serve warm or at room temperature.

  • For a vegetarian version, omit pancetta and add toasted nuts or smoked paprika.
  • Use firm pears to avoid mushiness.
  • Frozen peas work well—no need to thaw before cooking.
