Ingredients
  

  • 1 bag (32 oz) frozen tater tots
  • 1 lb breakfast sausage
  • ¼ cup all-purpose flour
  • 3 cups milk (whole or 2%)
  • Salt and black pepper to taste

Instructions
 

  • Bake Tater Tots: Preheat oven to 425°F (220°C). Spread tots on a baking sheet and bake 20–25 minutes until golden and crispy.
  • Cook Sausage: In a skillet, brown sausage over medium heat until fully cooked. Remove sausage, leaving drippings in the pan.
  • Make Roux: Add flour to drippings, whisking for 1–2 minutes until golden.
  • Add Milk: Slowly whisk in milk, stirring constantly until smooth and thickened. Return sausage to skillet. Season with salt and pepper.
  • Assemble Bowls: Divide crispy tots into bowls. Spoon sausage gravy generously over the top.
  • Add Toppings: Garnish with cheese, fried eggs, green onions, or hot sauce. Serve immediately.
