Instructions
 

  • Cook Pasta: Boil pasta until al dente. Drain and rinse under cold water. Chill for 15–20 minutes.
  • Prepare Vegetables: Dice cucumber, bell pepper, and tomatoes. Blanch asparagus until tender‑crisp, then cool.
  • Whisk Dressing: Combine lemon juice, zest, Dijon mustard, olive oil, salt, and pepper. Whisk until emulsified.
  • Toss Salad: Mix chilled pasta with vegetables and herbs. Pour dressing over and toss until evenly coated.
  • Add Cheese & Serve: Fold in feta or goat cheese. Garnish with extra herbs or pine nuts. Chill for 30 minutes before serving.
