Ingredients
  

Protein & Rice:

  • 1 lb ground beef, turkey, chicken, or plant-based protein
  • 1 cup white or brown rice (or cilantro lime rice)
  • 2 cups water or broth

Seasonings:

  • 1 packet taco seasoning or homemade blend (cumin, chili powder, garlic powder, onion powder, paprika, salt, pepper)
  • Optional: cayenne or chili flakes for heat

Toppings:

  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 avocado, sliced or diced
  • ½ cup shredded cheddar or Mexican blend cheese
  • ½ cup salsa
  • ¼ cup sour cream or Greek yogurt
  • Fresh cilantro for garnish

Crunch:

  • 1–2 cups Doritos (Nacho Cheese or Cool Ranch recommended)

Optional: black beans, corn, jalapeños, lime wedges

Instructions
 

  • Cook the Rice: Rinse rice under cold water. Combine rice and water or broth in a rice cooker or saucepan. Cook according to package directions. Fluff when done.
  • Cook Protein: Heat a skillet over medium-high heat. Add a bit of oil, then cook your protein, breaking it apart. Drain excess fat if needed. Stir in taco seasoning and a splash of water. Simmer 3–5 minutes.
  • Prep Toppings: While rice and protein cook, chop lettuce, tomatoes, avocado, and cilantro. Shred cheese if needed.
  • Assemble Bowls: Divide rice among bowls. Top with cooked protein, then fresh toppings.
  • Add Crunch: Just before serving, sprinkle Doritos whole or crushed on top for crunch.
  • Serve: Garnish with cilantro and a lime wedge, plus salsa and sour cream on the side.

Notes

  • For vegetarian versions, substitute protein with black beans or tofu.
  • Use brown rice for a higher fiber option or cauliflower rice for a low-carb meal.
  • To keep Doritos crunchy, always add them last, right before eating.
