Equipment

  • Skillet or grill pan
  • Saucepan
  • Baking dish (if oven method used)
  • Sharp knife & cutting board

Ingredients

  • 1 lb chicken thighs or breasts, thinly sliced or whole
  • ½ cup raspberry preserves (or fresh raspberries, cooked down)
  • 2 jalapeños, seeded and diced (adjust heat to preference)
  • 2 cloves garlic, minced
  • 2 tbsp honey
  • 2 tbsp vinegar (apple cider or white)
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • Optional: fresh raspberries, cilantro, lime zest for garnish

Instructions

  • Prep Chicken: Season with salt, pepper, and garlic powder. Optional: marinate in olive oil and vinegar for 30 minutes.
  • Make Glaze: In a saucepan, combine raspberry preserves, jalapeños, garlic, honey, and vinegar. Simmer gently until glossy and slightly thickened.
  • Cook Chicken:
Skillet: Heat oil, sear chicken until golden, then spoon glaze over and let it caramelize.
Oven: Place chicken in baking dish, brush with glaze, bake at 375°F until cooked through (165°F internal temp).
Grill: Grill chicken, brushing glaze during last few minutes for sticky finish.
  • Finish: Coat chicken generously with glaze. Garnish with cilantro, lime zest, or fresh raspberries. Serve hot.

Notes

  • Fruit Options: Swap raspberries for peaches or cranberries.
  • Spice Control: Remove jalapeño seeds for milder heat; add serranos or habaneros for extra fire.
  • Protein Alternatives: Tofu or cauliflower steaks work well for vegetarian versions.
  • Storage: Keeps up to 4 days in the fridge; glaze intensifies over time.
  • Expert Tip: Don’t over-reduce the glaze—keep it glossy and pourable.
