Ingredients
  

  • 1 lb shallots, peeled and halved
  • 4–5 slices thick-cut bacon
  • 3 tbsp honey
  • 2 tbsp balsamic vinegar
  • 1 tsp fresh thyme or rosemary
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Salt and black pepper, to taste

Instructions
 

  • Prep: Preheat oven to 400°F (200°C). Peel shallots and trim ends.
  • Cook bacon: Crisp bacon in a skillet over medium heat. Drain on paper towels, then crumble.
  • Make glaze: Whisk honey, balsamic vinegar, olive oil, herbs, salt, and pepper in a bowl.
  • Roast shallots: Toss shallots in glaze. Spread on baking sheet, cut-side down, without overcrowding. Roast 25–30 minutes, turning once, until caramelized and tender.
  • Combine: Transfer roasted shallots to serving dish. Drizzle with extra glaze, sprinkle with bacon bits and parsley.

Notes

  • Make-ahead: Roast shallots up to 1 day in advance; reheat before serving.
