Ingredients
  

Crust:

  • 1½ cups graham cracker crumbs or crushed shortbread cookies
  • 6 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar

Filling:

  • 2 cups mashed roasted sweet potatoes
  • 2 large eggs
  • ½ cup brown sugar
  • ½ cup evaporated milk or condensed milk
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp nutmeg
  • ¼ tsp ginger
  • Pinch of salt

Optional Toppings:

  • Marshmallow fluff
  • Whipped cream
  • Chopped pecans
  • Caramel drizzle

Instructions
 

  • Prepare Sweet Potatoes Roast or boil sweet potatoes until tender. Peel and mash until smooth.
  • Make the Filling In a bowl, mix mashed sweet potatoes with eggs, sugar, spices, milk, vanilla, and salt until creamy.
  • Prepare the Crust Combine crumbs, melted butter, and sugar. Press into a parchment-lined 9x13 pan. Pre-bake at 350°F (175°C) for 10 minutes.
  • Add Filling and Bake Pour filling over crust. Smooth top. Bake at 350°F (175°C) for 45–50 minutes until set.
  • Cool and Slice Cool completely, then chill for 1 hour before slicing for clean edges.
