Ingredients
  

  • 4 large carrots, shredded or thinly sliced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp paprika
  • Salt & pepper to taste
  • Fresh parsley or cilantro, chopped
  • Optional add-ins: raisins, dates, feta, toasted almonds or pistachios

Instructions
 

  • Prepare Carrots: Shred or slice carrots thinly and place in a large bowl.
  • Add Chickpeas: Rinse and drain chickpeas thoroughly, then add to carrots.
  • Make Dressing: In a small bowl, whisk olive oil, lemon juice, garlic, cumin, coriander, paprika, salt, and pepper. Taste and adjust seasoning.
  • Combine: Pour dressing over carrots and chickpeas. Toss gently until evenly coated.
  • Garnish: Add fresh herbs and optional toppings like raisins, feta, or nuts.
  • Chill & Serve: Refrigerate for 15 minutes before serving to allow flavors to meld.
