Ingredients
  

  • 4 slices sturdy bread (sourdough or ciabatta)
  • 2 tbsp softened butter (or olive oil)
  • 3 tbsp sun-dried tomato pesto
  • 4 slices mozzarella, provolone, or cheddar (or 1 cup shredded)
  • Optional: fresh basil, arugula, or caramelized onions

Instructions
 

  • Prepare bread: Spread butter on the outside of each slice.
  • Spread pesto: On the inside of two slices, spread sun-dried tomato pesto.
  • Layer cheese: Add cheese slices (or shredded cheese). Optional: add basil, arugula, or onions.
  • Assemble: Top with remaining bread slices, buttered side out.
  • Grill: Heat skillet over medium-low. Cook sandwiches 3–4 minutes per side until bread is golden and cheese is melted.
  • Serve: Slice diagonally and enjoy hot.
