Strawberry Cream Soda

Equipment

  • Fine mesh strainer (optional)
  • Mason jars or soda glasses
  • Spoon or straw

Ingredients
  

  • 1 ½ cups fresh strawberries, hulled
  • 2–3 tbsp simple syrup (or honey/maple to taste)
  • ¼ cup heavy cream (or coconut cream/oat cream)
  • 1 ½ cups soda water or sparkling water
  • Ice cubes
  • Optional: ½ tsp vanilla extract, lemon juice, whipped cream, fresh mint

Instructions
 

Make Strawberry Purée:

  • Blend strawberries with syrup until smooth. Strain for a pulp-free version (optional).

Chill Components:

  • Refrigerate the purée, cream, and soda water for at least 30 minutes for best results.

Assemble the Drink:

  • Fill each glass with ice. Add 2–3 tablespoons of strawberry purée at the bottom. Pour over 1–2 tablespoons of cream, then top off with chilled soda water.

Gently Stir:

  • Swirl gently to mix or leave slightly layered for a visual ombré effect.

Garnish & Serve:

  • Top with fresh strawberries, whipped cream, or a mint sprig. Serve immediately with a straw.

Notes

  • Make it vegan: Use maple syrup and coconut cream.
  • Make it extra indulgent: Add a scoop of vanilla ice cream for a float version.
  • Want it thicker? Blend the strawberries with a few cubes of ice to make a smoothie-like texture.
  • Adjust sweetness: Add more or less syrup based on the natural sweetness of your strawberries.
  • For parties: Make a large batch of purée and let guests build their own soda!
