Ingredients
  

  • 1½ cups chopped strawberries (fresh or thawed frozen)
  • ½ cup sugar (or honey/agave)
  • 1 tbsp lemon juice
  • ¼ cup water
  • 8 tbsp heavy cream or half-and-half (or coconut cream for dairy-free)
  • 2 cups chilled club soda or sparkling water
  • Ice cubes

Instructions
 

  • Combine strawberries, sugar, lemon juice, and water in a small saucepan. Simmer and mash for 10–12 minutes. Cool and strain if desired.
  • Fill glasses with ice. Pour 3–4 tbsp strawberry syrup per glass.
  • Add 2 tbsp cream, then top with ½ cup soda.
  • Stir gently to swirl layers. Garnish with fresh strawberries or mint.

Notes

  • Adjust sweetness and creaminess to your liking.
  • For a float, add a scoop of vanilla ice cream instead of cream.
  • Store syrup refrigerated up to 1 week.
  • Assemble drinks just before serving for best fizz.
