- 1½ cups chopped strawberries (fresh or thawed frozen)
- ½ cup sugar (or honey/agave)
- 1 tbsp lemon juice
- ¼ cup water
- 8 tbsp heavy cream or half-and-half (or coconut cream for dairy-free)
- 2 cups chilled club soda or sparkling water
- Ice cubes
Combine strawberries, sugar, lemon juice, and water in a small saucepan. Simmer and mash for 10–12 minutes. Cool and strain if desired.
Fill glasses with ice. Pour 3–4 tbsp strawberry syrup per glass.
Add 2 tbsp cream, then top with ½ cup soda.
Stir gently to swirl layers. Garnish with fresh strawberries or mint.
