Ingredients
  

  • 3 very ripe bananas, mashed
  • 2 large eggs
  • ½ cup unsalted butter, melted
  • ¾ cup granulated sugar (or brown sugar)
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp cardamom
  • Pinch of cloves
  • ½ cup dulce de leche (slightly warmed for swirling)

Instructions
 

  • Prep oven & pan: Preheat oven to 350°F (175°C). Grease and line a 9x5 loaf pan.
  • Mash bananas: In a large bowl, mash bananas until smooth.
  • Mix wet ingredients: Add eggs, melted butter, sugar, and vanilla. Whisk until combined.
  • Mix dry ingredients: In another bowl, whisk flour, baking soda, salt, and spices.
  • Combine: Gently fold dry mixture into wet until just combined. Avoid overmixing.
  • Layer dulce de leche: Pour half the batter into pan. Add spoonfuls of dulce de leche, swirl lightly. Add remaining batter and repeat swirl.
  • Bake: Bake 55–65 minutes, until a toothpick comes out clean (except for caramel pockets).
  • Cool: Rest in pan 10 minutes, then transfer to wire rack. Slice after cooling.
