- 1 pound fresh strawberries, washed and hulled
- ¾ to 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- ¾ to 1 cup sweetener (simple syrup, cane sugar, honey, or maple syrup)
- 4 cups chilled sparkling water or club soda
- Optional: fresh mint or basil leaves, lemon zest, strawberry slices, ginger slices for garnish
Purée strawberries in a blender or mash them by hand for a chunkier texture. Strain if desired.
Juice lemons using a citrus juicer and measure the juice.
In a large pitcher, combine strawberry purée, lemon juice, and sweetener. Stir well until sweetener dissolves. Taste and adjust sweetness or tartness as needed.
Slowly add chilled sparkling water, stirring gently to preserve fizz.
Refrigerate for 30 minutes if desired. Serve over ice, garnished with lemon slices, strawberry halves, and fresh herbs.
