Equipment

  • Large skillet or oven-safe pan
  • Wooden spoon or spatula
  • Measuring cups & spoons
  • Sharp knife & cutting board

Ingredients

  • 4 boneless chicken breasts (or thighs)
  • 1 cup full‑fat sour cream
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp paprika
  • Salt & black pepper, to taste
  • 2 tbsp olive oil or butter
  • Fresh parsley or chives, for garnish
  • Optional Add‑Ins: ½ cup shredded cheese, 1 cup mushrooms, or 2 cups fresh spinach

Instructions

  • Prep the Chicken: Pat dry and season with salt, pepper, and paprika.
  • Sear: Heat oil in skillet. Sear chicken until golden brown on both sides. Remove and set aside.
  • Build Sauce: In the same pan, sauté onions until soft. Add garlic, then deglaze with broth. Stir in sour cream until smooth.
  • Cook Chicken: Return chicken to pan. Simmer gently until cooked through (internal temp 165°F).
  • Finish: Garnish with parsley or chives. Serve hot over rice, pasta, or mashed potatoes.

Notes

  • Full‑Fat Sour Cream: Prevents curdling and ensures a silky sauce.
  • Chicken Cuts: Breasts are leaner; thighs are juicier and more forgiving.
  • Make Ahead: Store leftovers in the fridge for 3–4 days or freeze up to 2 months.
  • Reheating Tip: Warm gently with a splash of broth to restore creaminess.
  • Serving Ideas: Pair with mashed potatoes, rice, pasta, or crusty bread.
