Ingredients
  

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 6 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • Optional: ½ tsp smoked paprika, fresh parsley for garnish

Instructions
 

  • Prep Chicken: Flatten chicken breasts to even thickness. Season both sides with salt, pepper, and optional paprika.
  • Sear Chicken: Heat olive oil in a skillet over medium-high heat. Sear chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  • Cook Bacon: In the same skillet, cook bacon until crispy. Drain on paper towels and crumble.
  • Sauté Veggies: Add garlic to skillet and sauté for 1 minute. Add spinach and tomatoes, cooking until wilted and softened.
  • Make Sauce: Pour in cream and bring to a simmer. Stir in Parmesan until melted and smooth.
  • Smother Chicken: Return chicken to skillet. Spoon sauce and veggies over each piece. Top with bacon and simmer 2–3 minutes.
  • Rest & Serve: Let chicken rest 5–10 minutes before serving. Garnish with parsley if desired.
