Ingredients
  

  • 2–3 medium yellow onions, thinly sliced
  • 2 tbsp butter or olive oil
  • 8 oz cream cheese, softened
  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 1½ cups smoked gouda, freshly grated
  • Optional: 2 cloves garlic (minced), ¼ cup chopped chives, ¼ cup crispy bacon bits
  • Salt and pepper to taste
  • Optional garnish: parsley, paprika, crispy shallots

Instructions
 

  • Caramelize Onions: In a skillet over low heat, cook sliced onions in butter or oil for 30–45 minutes until golden and jammy. Stir occasionally. Add a splash of balsamic or pinch of sugar if desired.
  • Prepare Base: In a mixing bowl, combine cream cheese, sour cream, and mayonnaise. Mix until smooth.
  • Combine Ingredients: Fold in grated smoked gouda, cooled caramelized onions, and any optional add-ins like garlic, chives, or bacon.
  • Bake or Chill:
    For warm dip: Transfer to baking dish and bake at 350°F (175°C) for 20 minutes until bubbly.
    For cold dip: Chill for at least 1 hour before serving.
  • Serve: Garnish and serve with crostini, pretzels, or veggie sticks.
