Ingredients
  

  • 3 lbs chuck roast or stew beef, cut into chunks
  • 2 lbs Yukon gold or baby potatoes, halved
  • 6 garlic cloves, minced
  • ½ cup unsalted butter (or olive oil substitute)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried rosemary or thyme
  • ½ cup beef broth

Instructions
 

  • Prep beef & potatoes: Cut beef into chunks, season with salt, pepper, and paprika. Wash and halve potatoes.
  • Optional sear: Brown beef in a skillet with a little butter for extra flavor. Transfer to slow cooker.
  • Make garlic butter sauce: Melt butter with garlic, rosemary, and thyme. Pour over beef and potatoes. Add beef broth.
  • Slow cook: Cover and cook on low for 7–8 hours or high for 4–5 hours, until beef is tender and potatoes are creamy.
  • Finish & serve: Garnish with parsley or Parmesan. Serve hot with crusty bread, rice, or salad.
