Ingredients
  

  • 3 cups whole wheat flour
  • 1 cup warm water (110°F/43°C)
  • 2¼ tsp active dry yeast (or 1 packet)
  • 2 tbsp honey or maple syrup
  • 2 tbsp olive oil or melted butter
  • 1 tsp salt

Optional Add-ins:

  • 2 tbsp milk
  • 1 tsp apple cider vinegar
  • 1 tbsp vital wheat gluten
  • 2 tbsp flaxseed, sunflower seeds, or oats
  • 1 tbsp wheat germ or chia seeds

Instructions
 

  • Activate Yeast In a large bowl, mix warm water and honey. Stir in yeast and let sit for 5–10 minutes until foamy.
  • Mix Dough Add oil, salt, and flour (plus any optional ingredients). Stir until a shaggy dough forms.
  • Knead Knead by hand for 10–12 minutes or in a stand mixer for 6–8 minutes until smooth and elastic.
  • First Rise Place dough in a greased bowl, cover, and let rise for 1–2 hours until doubled.
  • Shape & Second Rise Punch down dough, shape into a loaf, and place in greased pan. Cover and let rise 30–45 minutes.
  • Bake Preheat oven to 375°F (190°C). Bake for 30–35 minutes until golden and hollow-sounding when tapped.
  • Cool Remove from pan and cool on wire rack for at least 1 hour before slicing.
