Equipment

  • Large pot (for pasta)
  • Skillet or sauté pan
  • Colander
  • Wooden spoon
  • Tongs
  • Measuring cups & spoons

Ingredients

  • 1 lb large shrimp (peeled, deveined, tail-on optional)
  • 12 oz linguini pasta
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ cup dry white wine (Sauvignon Blanc or Pinot Grigio)
  • Juice of 1 lemon
  • ¼ cup fresh parsley, chopped
  • ½ tsp red pepper flakes (optional)
  • Salt & black pepper to taste

Instructions

  • Cook pasta: Boil linguini in salted water until al dente. Reserve ½ cup pasta water. Drain.
  • Sauté shrimp: Heat olive oil and 1 tbsp butter in skillet. Add shrimp, season with salt and pepper, and cook 2–3 minutes per side until pink. Remove and set aside.
  • Make sauce: In same skillet, add garlic and sauté until fragrant. Deglaze with white wine, simmer until reduced. Stir in lemon juice and remaining butter.
  • Combine: Return shrimp to skillet. Add linguini and toss with sauce. Use reserved pasta water to adjust consistency.
  • Finish: Garnish with parsley and optional red pepper flakes. Serve hot with lemon wedges.

Notes

  • Wine substitute: Use chicken broth if avoiding alcohol.
  • Spicy twist: Add extra red pepper flakes for heat.
  • Creamy variation: Stir in ¼ cup heavy cream for a richer sauce.
  • Make-ahead tip: Sauce can be prepared in advance; cook shrimp fresh for best texture.
  • Pairings: Serve with garlic bread and a crisp salad for a complete meal.
