Optional Topping

Cook Rice: Prepare rice according to package instructions. Slightly undercook if desired, as it will finish baking in the casserole.
Sauté Vegetables: Heat 1 tbsp olive oil in a skillet over medium heat. Sauté zucchini, tomatoes, onions, garlic, and bell peppers (if using) until softened. Lightly salt zucchini to remove excess water.
Combine Ingredients: In a mixing bowl, combine cooked rice, sautéed vegetables, ¾ of the cheese, herbs, paprika, salt, and pepper. Mix gently.
Assemble Casserole: Transfer mixture to prepared 9×13-inch baking dish. Top with remaining cheese and optional breadcrumb topping.
