Ingredients
  

  • 12 oz tortellini (fresh or refrigerated)
  • 1 lb sausage (Italian, smoked, or turkey), sliced or crumbled
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup mushrooms, sliced
  • 2 cups spinach leaves
  • 2 cloves garlic, minced
  • ½ onion, diced
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Optional: red pepper flakes, Parmesan cheese, balsamic glaze

Instructions
 

  • Cook Tortellini: Boil tortellini until al dente. Drain and set aside.
  • Cook Sausage: In a large skillet, heat 1 tbsp olive oil. Cook sausage until browned. Remove and set aside.
  • Stir-Fry Vegetables: Add remaining oil, garlic, and onion. Stir-fry bell pepper, zucchini, and mushrooms until tender-crisp.
  • Combine: Return sausage to skillet. Add tortellini and spinach. Toss with Italian seasoning, salt, and pepper.
  • Finish: Stir until spinach wilts and everything is heated through. Garnish with Parmesan or balsamic glaze.
