Ingredients
  

Sausage:

  • 8 oz (225 g) breakfast sausage (pork, turkey, or plant-based)

Eggs:

  • 4 large eggs
  • Salt & pepper, to taste

Cheese:

  • ½ cup shredded cheddar, mozzarella, or pepper jack

Dough/Tortilla:

  • 4–6 large flour tortillas, crescent roll dough, or puff pastry sheets

Optional Add-ins:

  • Spinach, bell peppers, mushrooms, jalapeños, chives
  • Hot sauce, salsa, or ketchup for serving

Instructions
 

  • Cook sausage: In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess fat.
  • Scramble eggs: Whisk eggs with salt and pepper, cook gently until just set. Remove from heat.
  • Prepare dough/tortilla: Roll out crescent or puff pastry slightly, or lay tortillas flat.
  • Assemble roll-ups: Layer sausage, scrambled eggs, cheese, and optional add-ins along the center. Roll tightly, sealing edges if needed.

Bake or cook:

  • Dough/pastry: Bake at 375°F (190°C) for 12–15 minutes until golden brown.
  • Tortilla: Cook in skillet over medium heat 2–3 minutes per side until cheese melts and tortilla is slightly crisp.
  • Serve: Warm, optionally with salsa, hot sauce, or fresh fruit.
