Ingredients
  

Filling:

  • 6 large eggs
  • Salt and pepper, to taste
  • 1 cup shredded cheese (cheddar, mozzarella, pepper jack, or mix)
  • Optional: sautéed bell peppers, onions, spinach, herbs

Dough:

  • 1 package crescent roll dough, puff pastry, biscuit dough, or homemade bread dough

For sealing:

  • Water or beaten egg (optional)

Instructions
 

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • Cook sausage in skillet over medium heat until browned and cooked through. Drain and set aside.
  • Whisk eggs with salt and pepper. Scramble gently over low heat until just set and moist. Remove from heat.
  • Roll out dough and cut into rectangles or squares sized to hold filling.
  • Place a portion of sausage, scrambled eggs, and cheese on each dough piece. Add optional veggies or herbs.
  • Fold dough over filling and pinch edges firmly to seal. Place seam side down on baking sheet.
  • Chill assembled rolls for 15–20 minutes if possible.
  • Bake rolls for 15–20 minutes until golden brown and cooked through.
  • Let cool slightly before serving.
