Ingredients
  

  • 2–3 whole garlic bulbs
  • 2 tbsp olive oil
  • 1 onion or 2 shallots, diced
  • 4 cups chicken or vegetable broth
  • 2 medium potatoes (or 2 cups cauliflower florets)
  • ½ cup heavy cream (or cashew cream for vegan)
  • 1 tsp fresh thyme or sage
  • Salt & pepper to taste
  • Optional garnish: Parmesan crisps, croutons, lemon juice, fresh chives

Instructions
 

  • Roast Garlic: Preheat oven to 180°C (350°F). Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast for 40 minutes until golden and soft.
  • Sauté Aromatics: In a large pot, sauté onion or shallots in olive oil until translucent. Add herbs.
  • Build Base: Squeeze roasted garlic into pot. Add broth and potatoes/cauliflower. Simmer 20 minutes until tender.
  • Blend: Puree with immersion blender until smooth and creamy.
  • Finish: Stir in cream. Adjust seasoning with salt, pepper, and a splash of lemon juice.
  • Serve: Garnish with Parmesan crisps, croutons, or fresh herbs.
