Ingredients
  

  • ¼ cup turkey fat (from drippings)
  • ¼ cup all-purpose flour
  • 3–4 cups turkey or chicken stock
  • Pan drippings from roasted turkey
  • Salt and black pepper to taste
  • Optional: fresh thyme, sage, or rosemary

  • Collect Drippings: Pour turkey drippings into a measuring cup. Skim off excess fat, reserving ¼ cup.
  • Make Roux: Heat reserved fat in a saucepan. Whisk in flour and cook 2–3 minutes until golden.
  • Add Stock: Gradually whisk in stock, stirring constantly. Deglaze roasting pan with stock to capture browned bits.
  • Simmer: Cook over medium heat until thickened, about 8–10 minutes.
  • Season: Add salt, pepper, and herbs if desired. Taste and adjust.
  • Strain: For a silky finish, strain through a fine mesh sieve.
  • Serve: Pour into a gravy boat and serve hot over turkey, potatoes, or stuffing.
