Equipment

  • Cast iron skillet or grill pan
  • Sharp chef’s knife
  • Tongs
  • Cutting board
  • Meat thermometer
  • Small bowl for garlic butter
  • Optional: ladle, serving platter

Ingredients

For the steak:

  • 2 steaks (ribeye, sirloin, or picanha), 1–1.5 inches thick
  • Salt and freshly cracked black pepper, to taste
  • 1–2 tsp olive oil

For the garlic butter:

  • 2–3 tbsp unsalted butter
  • 2 cloves garlic, minced
  • Optional: chopped parsley or thyme for garnish
  • Optional: squeeze of lime

Instructions

  • Prep the steak: Bring steak to room temperature (~20–30 minutes). Pat dry and season generously with salt and pepper.
  • Heat skillet: Preheat a cast-iron skillet or grill pan on high heat. Add a small drizzle of oil.
  • Sear steak: Place steak in pan; cook without moving:
    Rare: 3 min/side
    Medium-rare: 4 min/side
    Medium: 5 min/side
    Well-done: 6+ min/side
  • Add garlic butter: During the last minute of cooking, add butter and minced garlic. Tilt pan and spoon butter over steak.
  • Rest steak: Remove from skillet; let rest 5–7 minutes.
  • Slice and serve: Cut against the grain. Garnish with fresh herbs or a squeeze of lime. Serve with Brazilian sides like rice, beans, farofa, roasted vegetables, or pão de queijo.

Notes

  • Resting the steak is crucial for juicy results.
  • Avoid overcrowding the skillet; cook in batches if needed.
  • Use fresh garlic for best flavor; add at the end to prevent burning.
  • Optional variations: chili flakes for spice, rosemary or thyme for herbaceous flavor, or chimichurri topping for authentic Brazilian flair.
  • Refrigerate leftovers up to 3–4 days; reheat gently in a skillet to maintain tenderness.
