  • Oven

Ingredients

  • 2 lbs starchy potatoes (Russet or Yukon Gold)
  • 4 tbsp butter
  • ½ cup milk or cream
  • Salt & pepper to taste
  • 2 garlic cloves, minced (optional)
  • 2 cups fresh mozzarella (sliced or shredded)
  • 1 tsp dried herbs (thyme, rosemary, or parsley)
  • Optional garnish: crispy onions or fresh parsley

Instructions

  • Boil Potatoes: Peel and chop potatoes. Boil in salted water until tender, 15–20 minutes. Drain well.
  • Mash Potatoes: Mash with butter, milk, garlic, salt, and pepper until creamy. Taste and adjust seasoning.
  • Layer Pie: Grease a pie dish. Spread half the mash on the bottom. Add mozzarella slices evenly. Cover with remaining mash.
  • Bake: Bake at 375°F (190°C) for 25–30 minutes until golden and bubbling.
  • Rest & Garnish: Let pie rest for 10 minutes before slicing. Garnish with herbs or crispy onions.

Notes

  • Use starchy potatoes for a creamy mash.
  •  Fresh mozzarella gives maximum stretch and gooeyness.
  •  Resting ensures neat slices and prevents collapse.
  •  Add spinach, bacon, or olives for creative variations.
  •  Reheat in oven for crispness—avoid microwaving.
