Equipment

  • Wok or large skillet
  • Sharp knife and cutting board
  • Mixing bowls
  • Wooden spoon or spatula

Ingredients

  • 1 lb pork tenderloin (or thinly sliced chops)
  • 2 tbsp soy sauce
  • 3 tbsp hoisin sauce (plus extra for finishing)
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp vegetable oil
  • Optional: 1 tsp sambal oelek or chili flakes for heat
  • Garnish: sesame seeds, sliced scallions

Instructions

  • Marinate Pork: Slice pork thinly against the grain. Toss with soy sauce, 1 tbsp hoisin, and sesame oil. Let sit for 10–15 minutes.
  • Cook Aromatics: Heat wok over high heat. Add vegetable oil, then stir-fry garlic, ginger, and onion until fragrant.
  • Add Pork: Stir-fry pork until browned and nearly cooked through, about 3–4 minutes.
  • Add Vegetables: Toss in asparagus and bell pepper. Stir-fry for 2–3 minutes until crisp-tender.
  • Finish with Sauce: Add remaining hoisin sauce and optional chili. Toss until glossy and well coated.
  • Serve: Plate over steamed rice, noodles, or quinoa. Garnish with sesame seeds and scallions.

Notes

  • Best Pork Cut: Tenderloin is lean and tender; chops work if sliced thin.
  • Asparagus Tip: Trim woody ends for best texture.
  • Flavor Boost: Add sambal oelek or chili flakes for spice.
  • Storage: Refrigerate leftovers up to 3 days; reheat quickly in a skillet to preserve texture.
  • Pro Tip: Keep heat high for wok hei—a smoky, authentic stir-fry flavor.
