Ingredients
  

  • 1 lb (450 g) chicken breast or thighs, cut into bite-sized pieces
  • 2 cups cooked rice (white, brown, or jasmine)
  • 1 cup pineapple chunks (fresh preferred)
  • 1 red bell pepper, sliced
  • 1 cup snap peas or broccoli florets
  • 2 tbsp soy sauce
  • 2 tbsp pineapple juice
  • 1 tbsp brown sugar (optional, adjust to taste)
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 tbsp vegetable oil
  • 2 tbsp vegetable oil
  • Garnish: chopped green onions, sesame seeds, cilantro

Instructions
 

  • Prep Chicken: Season chicken with salt, pepper, and a splash of soy sauce. Optional: marinate with garlic, ginger, and pineapple juice for 20 minutes.
  • Cook Rice: Prepare rice according to package instructions. For stir-fry rice, cook ahead and chill.
  • Make Sauce: In a small bowl, mix soy sauce, pineapple juice, garlic, ginger, and brown sugar. Adjust sweetness.
  • Stir-Fry Chicken: Heat oil in a wok/skillet over high heat. Add chicken and cook until golden brown.
  • Add Vegetables: Toss in bell pepper and snap peas. Stir-fry for 2–3 minutes until crisp-tender.
  • Combine: Pour sauce over chicken and veggies. Stir until slightly thickened. Add rice and pineapple chunks, mixing well.
  • Finish: Garnish with green onions, sesame seeds, or cilantro. Serve hot.

Notes

  • Fresh pineapple gives the best flavor and texture, but canned works in a pinch.
  • For a lighter version, use brown rice or cauliflower rice.
  • Add chili flakes or sriracha for a spicy kick.
  • Store leftovers in airtight containers for up to 3–4 days; reheat with a splash of water or pineapple juice.
  • Freezing tip: freeze chicken and pineapple mixture separately; cook fresh rice when serving.
