Ingredients
  

  • 2 lbs bone-in chicken thighs or breasts
  • 10 cups water or chicken stock
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups egg noodles (or rice noodles for gluten-free)

Instructions
 

  • Prepare Broth: In a large pot, heat olive oil. Add onion, garlic, carrots, and celery. Sauté until softened.
  • Add Chicken & Liquid: Place chicken in pot. Pour in water or stock. Add salt. Simmer for 45–60 minutes until chicken is cooked and broth is rich.
  • Shred Chicken: Remove chicken, discard bones, and shred meat. Return meat to pot.
  • Add Noodles: Stir in noodles and cook until tender, about 8–10 minutes.
  • Season Generously: Add freshly ground black pepper, tasting and adjusting gradually.
  • Finish & Serve: Garnish with parsley, lemon zest, or Parmesan. Ladle into bowls and serve hot.
