Ingredients
  

  • 1 large ripe peach (or 1 cup thawed frozen peach slices)
  • 3 tbsp balsamic vinegar (or white balsamic for lighter flavor)
  • 2 tsp Dijon mustard
  • 2–3 tbsp honey (adjust to taste)
  • ½ cup extra virgin olive oil
  • Salt & black pepper, to taste
  • Optional: fresh herbs (basil, mint, thyme), 1 small shallot, pinch red pepper flakes

Instructions
 

  • Prepare the Peach – Peel, pit, and chop the peach (or thaw frozen slices).
  • Blend Base – In a blender, combine peach, balsamic vinegar, Dijon mustard, honey, salt, and pepper. Blend until smooth.
  • Emulsify – With the blender running, slowly drizzle in olive oil until the vinaigrette becomes silky and well-emulsified.
  • Taste & Adjust – Add more honey for sweetness, vinegar for tang, or mustard for sharpness.
  • Chill – Transfer to a glass jar and refrigerate for at least 30 minutes before serving. Shake well before each use.

  • Vegan-Friendly: Use maple syrup or agave instead of honey.
