- ½ cup breadcrumbs (or almond flour for gluten-free)
- ½ cup grated Parmesan cheese
- 1 large egg
- 2 garlic cloves, minced
- 1 tbsp chopped basil
- 1 tbsp chopped parsley
- ½ tsp dried oregano
- ½ cup marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- Salt & pepper to taste
Mix Meatloaf Base: In a bowl, combine ground chicken, breadcrumbs, Parmesan, egg, garlic, herbs, salt, and pepper. Mix gently until just combined.
Shape Loaf: Transfer mixture to a greased loaf pan or shape free-form on a baking sheet. Smooth the top.
