Equipment

  • Large mixing bowl
  • Whisk
  • Cutting board and knife
  • 9x13-inch baking dish
  • Aluminum foil

Ingredients

  • 6 large croissants (day-old preferred), torn into chunks
  • 8 large eggs
  • 2 cups milk (or half-and-half for richer custard)
  • 1 cup shredded cheese (cheddar, Gruyère, or mozzarella)
  • 1 cup cooked ham, bacon, or sausage (optional)
  • 1 cup vegetables (spinach, mushrooms, peppers)
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  • Prepare croissants: Tear croissants into chunks and place in a greased baking dish.
  • Whisk custard: In a bowl, whisk eggs, milk, salt, pepper, and seasonings.
  • Layer ingredients: Scatter cheese, meats, and vegetables over croissants. Pour custard evenly over the top.
  • Refrigerate overnight: Cover with foil or plastic wrap. Chill for 8–12 hours.
  • Bake: Preheat oven to 350°F (175°C). Cover casserole with foil and bake for 30 minutes. Remove foil and bake another 15 minutes until golden and set.
  • Serve: Let rest for 5 minutes before serving. Garnish with herbs if desired.
  • Expert Tip: Cover with foil during the first half of baking to prevent over-browning while ensuring the custard cooks evenly.

Notes

  • Day-old croissants absorb custard better.
  • Whole wheat croissants and reduced-fat cheese make a lighter version.
  • Add extra vegetables for nutrition and flavor.
  • Freeze baked portions for up to 1 month; reheat in oven.
  • Perfect for holidays, brunches, or meal prep.
