Ingredients
  

  • 1½ cups all-purpose flour (or whole wheat for lighter version)
  • 1 tsp baking powder
  • Pinch of salt
  • 2 large eggs (room temperature)
  • ½ cup honey
  • ½ cup melted butter (or neutral oil for dairy-free)
  • Zest of 1 large orange
  • 1 tbsp freshly grated ginger
  • ¼ cup orange juice (for glaze)
  • 2 tbsp honey (for glaze)

Instructions
 

  • Prepare dry mix: In a bowl, whisk flour, baking powder, and salt.
  • Prepare wet mix: In another bowl, beat eggs, honey, melted butter, orange zest, and grated ginger until smooth.
  • Combine: Gently fold dry ingredients into wet mixture until just combined. Avoid overmixing.
  • Fill tins: Spoon batter into greased muffin tins, filling each about two-thirds full.
  • Bake: Bake at 350°F (175°C) for 18–22 minutes, until golden and fragrant. A toothpick should come out clean.
  • Cool & glaze: Let cakes cool slightly, then drizzle with glaze made from honey and orange juice.
  • Serve: Garnish with extra zest or candied ginger for presentation.

  • Whole wheat flour adds fiber and a nutty flavor.
  • Substitute butter with coconut oil for a dairy-free version.
