Ingredients
  

  • 1 lb chicken breast or thighs, cut into cubes
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 2 tbsp olive oil + 1 tbsp butter
  • 1 medium onion, diced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 can (14 oz) fire-roasted tomatoes
  • 4 cups chicken broth
  • 12 oz pasta (penne or rotini)
  • 4 oz cream cheese (or 1 cup heavy cream)
  • 1 cup shredded cheddar or Parmesan
  • Salt & pepper to taste
  • Fresh parsley or scallions for garnish

Instructions
 

  • Season Chicken: Toss chicken cubes with Cajun seasoning.
  • Brown Chicken: Heat oil and butter in pot. Brown chicken until golden, then remove and set aside.
  • Sauté Vegetables: Add onion, bell pepper, and garlic to pot. Cook until softened.
  • Add Pasta & Broth: Stir in pasta, broth, and fire-roasted tomatoes. Return chicken to pot. Simmer uncovered, stirring often, until pasta is tender (12–15 minutes).
  • Add Cream: Reduce heat. Stir in cream cheese or heavy cream until smooth. Add shredded cheese and mix until melted.
  • Season & Garnish: Adjust salt and pepper. Garnish with parsley or scallions.
  • Serve Hot: Ladle into bowls and enjoy with garlic bread or salad.
